Ingredients

The following ingredients have 7 Servings
  • 1 dozen mini sweet peppers (red, orange, and yellow)
  • 1 1/2 cup leftover dressing (stuffing)
  • 3/4 cup Mozzarella cheese (divided)
  • Fresh thyme (finely chopped)

Instruction

  • Preheat oven to 350 degrees.
  • Prepare the peppers by slicing off the “top” (concave) side of the peppers, leaving the stem. Scoop out the seeds and the membrane.
  • In a bowl, combine the stuffing and 1/2 cup cheese. Heat in microwave for 1-2 minutes until softened and cheese is melted. Allow to cool for a few minutes.
  • Spoon the stuffing cheese mixture into the peppers, pressing it into each half. Sprinkle with remaining 1/4 cup cheese.
  • Arrange the peppers on a baking sheet and bake for around 18 minutes, until peppers are softened and cheese is hot and bubbly.
  • Garnish with fresh thyme; serve immediately.
