Ingredients

The following ingredients have 6 Servings
  • 3 cups old-fashioned rolled oats
  • 3/4 cup uncooked quinoa
  • 1/2 cup chopped pecans
  • 3/4 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • 1/4 cup coconut sugar (or brown sugar)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil (melted)
  • 1/2 cup maple syrup
  • 1 egg white (lightly beaten)
  • 2 teaspoons vanilla extract
  • 3/4 cup semisweet chocolate chips

Instruction

  • Preheat oven to 325F. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl, combine oats, quinoa, pecans, coconut, chia seeds, cinnamon, sugar, cocoa, and salt. In a separate medium bowl, whisk coconut oil, maple syrup, egg white, and vanilla until smooth. Pour over dry ingredients and stir until just moistened. Stir in chocolate chips.
  • Spread granola mixture onto prepared pan and gently flatten with a spatula. Bake granola at 325F without stirring 40-45 minutes or until edges begin to turn golden.
  • Cool granola completely then break into clusters and either serve or store.
