Ingredients
The following ingredients have 12 Servings
- 1 2/3 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup light brown sugar
- 1 cup plus 2 tablespoon buttermilk
- 1/3 cup plus 2 tablespoon vegetable oil
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup chopped nuts (walnuts or hazelnuts + extra to sprinkle on top)
- 1 cup chocolate chips (optional)
Instruction
- Preheat the oven to 400F, then line muffin pan with paper liners.
- In a mixing bowl sift flour, cocoa powder, baking soda, sugar, baking powder and salt. Give it a mix.
- In different bowl whisk eggs, buttermilk, oil, and vanilla extract.
- Pour buttermilk mixture into flour mixture, stir until batter is just combined. Fold in nuts and chocolate chips.
- Divide the batter among the muffin cups, sprinkle extra nuts on top.
- Bake for 20 minutes, or until a toothpick comes out clean when inserted in the center of the muffin.
- Transfer muffins from the pan to the wire rack to cool. Enjoy with coffee, or tea.
