Ingredients

The following ingredients have 6 Servings
  • 2 envelopes unflavored gelatin
  • ½ cup sugar
  • 4 cups white cranberry peach juice
  • 1 Tbsp lemon juice
  • 2 cups blueberries (you could use blackberries too)
  • 2 cups strawberries (quartered. I bet raspberries would be great also))
  • whipped cream

Instruction

  • Gelatin prep: In a medium size sauce pan, stir together the unflavored gelatin and sugar. Then, add in 1 cup of the juice and cook over low heat, stirring constantly for about 5 minutes, until the gelatin completely dissolves. After that, remove the pan from the heat and slowly stir in the remaining 3cups of juice and the lemon juice.
  • Chill & assemble: Next, spoon the washed blueberries into a 2-quart bowl, or divide them among 6 sundae glasses. Proceed to add half of the gelatin mixture to the bowl or each glass, then refrigerate them for about 2 hours or until set while leaving the remaining gelatin mixture at room temperature.
  • Once the blueberry gelatin half has chilled for 1 hour, with the other half of the room temperature gelatin, stir the strawberries into that mixture and then refrigerate that half for 1 hour until it is partially set.  
  • Once the blueberry mixture has chilled for 2 hours and the strawberry mixture for 1, proceed to spoon the strawberry mixture on top of the blueberry mixture to create a second layer. Again, refrigerate for about 3-4 hours or until completely set.  
  • Serve: When ready to serve, top each serving/glass with a dollop of whipped cream. Serve immediately and enjoy!
