Ingredients

The following ingredients have 12 Servings
  • 1 3/4 cups gluten-free flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 mashed ripe bananas
  • 2 eggs
  • 1/3 cup coconut milk
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 3/4 cup chocolate chips

Instruction

  • Preheat the oven to 350 degrees.
  • Sift the flour, cocoa powder, baking soda, and salt into a medium bowl. Set aside.
  • Mash the bananas. Add the eggs, coconut milk, coconut oil, and maple syrup. I like to mash the bananas in my blender, then I add the other ingredients and mix them in there. I transfer these wet ingredients to a large bowl.
  • Add the dry ingredients to the wet ingredients, and stir to combine. Stir in the chocolate chips.
  • Transfer the batter to a standard loaf pan or two mini loaf pans, filling the pan(s) 3/4 of the way to the top. Bake the bread for about 50 minutes in the full-sized loaf pan or 40 minutes in the mini loaf pans. Either way, the bread is done when a toothpick inserted in the center comes out clean.
