The following ingredients have 6 Servings
- 6 medium potatoes
- 1-2 tbsp. olive oil
- 4 oz. parmesan cheese
- Salt to taste
- Parsley (optional)
Instruction
- Preheat oven to 350 F. Set a cooling rack over each of 2 baking sheets.
- Peel potatoes and cut lengthwise into very thin slices (the thinner, the crispier), Cut slices into equally thin strips.
- In a large bowl drizzle fries lightly with olive oil and salt. Arrange fries on the cooling racks in a single layer being careful not to overcrowd.
- Roast for 30 minutes.
- Remove fries and increase oven temp to 425 F. Toss the fries in a large bowl with parmesan and parsley.
- Return to oven and bake until very crispy and brown, 15-20 minutes.
