Ingredients

The following ingredients have 6 Servings
  • 6 medium potatoes
  • 1-2 tbsp. olive oil
  • 4 oz. parmesan cheese
  • Salt to taste
  • Parsley (optional)

Instruction

  • Preheat oven to 350 F. Set a cooling rack over each of 2 baking sheets.
  • Peel potatoes and cut lengthwise into very thin slices (the thinner, the crispier), Cut slices into equally thin strips.
  • In a large bowl drizzle fries lightly with olive oil and salt. Arrange fries on the cooling racks in a single layer being careful not to overcrowd.
  • Roast for 30 minutes.
  • Remove fries and increase oven temp to 425 F. Toss the fries in a large bowl with parmesan and parsley.
  • Return to oven and bake until very crispy and brown, 15-20 minutes.
