Ingredients

The following ingredients have 4 Servings
  • 6 Whole Eggs (room temperature)
  • 1 1/2 Cups Matzah meal
  • 3/4 Cup Seltzer
  • 1/3 Cup Olive oil
  • 2 Tbsp Chicken schmaltz
  • 2 Tbsp Kosher salt

Instruction

  • Beat the eggs in a bowl using a fork. Follow up by adding the olive oil, seltzer water and schmaltz. Beat for 30 - 60 seconds. (Do not over beat). Add in the matzah meal. Using the fork, mix until just combined. Move to the fridge for 1 hour.Take mixture out of fridge while filling a pot with salted water and bring to a boil. Lightly oil your hands. Form the mixture into 2 inch balls until all the mixture is used. Drop the balls into the boiling water. Reduce the heat to a simmer. Cook the matzah balls for 30 - 40 minutes. Remove from pot.The traditional way to serve is in chicken broth with carrots and parsley. Enjoy!
