Ingredients
The following ingredients have 4 Servings
- 2 pounds small red potatoes, (halved)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon finely chopped shallot ((about 1/2 of a small shallot))
- 1 tablespoon Dijon Mustard
- 1 teaspoon organic granulated sugar
- 1/2 teaspoon salt, (plus more to taste)
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh chives
- 1/4 cup finely chopped fresh dill
- Black pepper, (to taste)
Instruction
- Place the potatoes into a large pot and cover them with water.
- Place the pot over high heat and bring the water to a boil.
- Boil the potatoes until fork tender, about 15 minutes.
- Drain the potatoes into a colander. Return them to the pot and let them cool a bit while you prepare the dressing.
- Whisk the oil, vinegar, shallot, Dijon mustard, sugar, and 1/2 teaspoon of salt together in a small bowl or liquid measuring cup.
- Place the potatoes into a large mixing bowl. Add the parsley, chives, and dill.
- Pour the dressing over the potatoes and herbs, and toss everything to evenly distribute the ingredients and coat the potatoes.
- Season the salad with salt and pepper to taste.
- Serve immediately or chill.
