- 3-4 - medium catfish pieces per person
- 1 cup(s) white corn meal
- 1/3 cup(s) all purpose flour
- 2 teaspoon(s) salt
- 2 teaspoon(s) lemon pepper
- 1 teaspoon(s) paprika
- 1/4 teaspoon(s) garlic powder
- 2 medium eggs
- 1/4 cup(s) buttermilk
- - enough cooking oil to cover the fish - peanut oil
Instruction
- COMBINE ALL YOUR DRY INGREDIENTS. BEAT EGGS AND BUTTERMILK IN A MEDIUM SIZE BOWL. WASH CATFISH FILLETS AND PAT DRY.
- DIP FILLETS IN THE EGG WASH, SHAKE OFF EXCESS WASH, THEN ROLL IN THE CORNMEAL MIX TO COAT THOROUGHLY ON ALL SIDES. MAKE SURE OIL IS HOT, THEN PLACE FISH IN FRYING PAN AND FRY UNTIL GOLDEN BROWN ON BOTH SIDES.
- DRAIN ON PAPER TOWELS AND SREVE HOT.
