Ingredients
The following ingredients have 4 Servings
- 1 lb ground turkey (or chicken)
- 2 carrots (shredded)
- 3 garlic cloves (minced)
- 1 T ginger paste (or fresh minced ginger)
- 8 oz can sliced water chestnuts (drained and chopped)
- 3/4 C fresh snow peas (chopped)
- 1/3 C teriyaki sauce (prepared)
- 1/4 C hoisin sauce (prepared)
- 2 T peanut butter
- 1 T rice vinegar
- 1 tsp sesame oil
- 2 C white rice (prepared)
- 2 green onions (chopped)
- 1/4 C chopped peanuts
- 12 oz chopped hearts of romaine
Instruction
- In a large non stick skillet cook chicken and carrot over medium heat until meat is cooked through. Add ginger and garlic, cook 1-2 minutes more.
- Stir in water chestnuts, snow peas, teriyaki sauce, hoisin sauce, peanut butter and sesame oil, then stir in the rice. Cook over medium heat until everything is warmed through; about 4 minutes.
- Serve immediately.
