Ingredients

The following ingredients have 4 Servings
  • 1 lb ground turkey (or chicken)
  • 2 carrots (shredded)
  • 3 garlic cloves (minced)
  • 1 T ginger paste (or fresh minced ginger)
  • 8 oz can sliced water chestnuts (drained and chopped)
  • 3/4 C fresh snow peas (chopped)
  • 1/3 C teriyaki sauce (prepared)
  • 1/4 C hoisin sauce (prepared)
  • 2 T peanut butter
  • 1 T rice vinegar
  • 1 tsp sesame oil
  • 2 C white rice (prepared)
  • 2 green onions (chopped)
  • 1/4 C chopped peanuts
  • 12 oz chopped hearts of romaine

Instruction

  • In a large non stick skillet cook chicken and carrot over medium heat until meat is cooked through. Add ginger and garlic, cook 1-2 minutes more.
  • Stir in water chestnuts, snow peas, teriyaki sauce, hoisin sauce, peanut butter and sesame oil, then stir in the rice. Cook over medium heat until everything is warmed through; about 4 minutes.
  • Serve immediately.
