Ingredients

The following ingredients have 4 Servings
  • 1 (4 oz) dark chocolate bar, coarsely chopped
  • 2 tablespoons agave syrup
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1/4 cup red wine
  • 1-1/2 cups fresh (or frozen) raspberries
  • 2 tablespoons agave syrup
  • 1 teaspoon lemon juice
  • Powdered sugar and shaved chocolate for serving

Instruction

  • In a double-boiler over medium-high heat, melt chocolate, stirring occasionally until smooth. Remove from heat and whisk in agave and vanilla. Allow to cool slightly.
  • In a large bowl with a handheld electric mixer, beat egg whites until stiff peaks form.
  • Very gently fold whipped egg whites and whipped cream into melted chocolate mixture until just combined. Press plastic wrap directly to surface and chill mousse two hours or until set.
