Ingredients

The following ingredients have 4 Servings
  • 3 cups roasted pumpkin ((about 3 small pumpkins))
  • 1½ cups Chicken Stock
  • ¾ cup full fat coconut milk
  • 2 tablespoons lemon juice, (fresh squeezed)
  • 1½ teaspoon ginger, (minced)
  • ¼ teaspoon celtic sea salt
  • ⅛ teaspoon stevia

Instruction

  • In a vitamix, combine pumpkin, chicken stock, and coconut milk
  • Process on high until smooth
  • Blend in lemon juice, ginger, salt, and stevia
  • In a 4 quart soup pot, bring mixture to a boil, reduce heat until desired consistency
  • Serve
