Ingredients
The following ingredients have 4 Servings
- 3 cups roasted pumpkin ((about 3 small pumpkins))
- 1½ cups Chicken Stock
- ¾ cup full fat coconut milk
- 2 tablespoons lemon juice, (fresh squeezed)
- 1½ teaspoon ginger, (minced)
- ¼ teaspoon celtic sea salt
- ⅛ teaspoon stevia
Instruction
- In a vitamix, combine pumpkin, chicken stock, and coconut milk
- Process on high until smooth
- Blend in lemon juice, ginger, salt, and stevia
- In a 4 quart soup pot, bring mixture to a boil, reduce heat until desired consistency
- Serve
