- ½ cup powdered sugar
- ½ teaspoon cream of tartar
- ½ cup granulated sugar
- ½ cup raw cashews
- 15 oz tub soft tofu
- 15 oz can full fat coconut milk* ((read note below))
- 3 tablespoons all-purpose flour
- 1 tablespoon vanilla
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 3 tablespoons granulated sugar ((or agave nectar or maple syrup))
- ¼ cup water
- 1 cup mixed berries (fresh or frozen)
- 1 tablespoon lemon juice
