Ingredients
The following ingredients have 20 Servings
- 1 cup butter
- 1 cup brown sugar
- 1 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 cups oats
- 3/4 cup shredded sweet coconut
Instruction
- Preheat your oven to 350 degrees F.
- Cream together the butter, white and brown sugars until light and fluffy.
- Add the egg and vanilla. Mix until creamy.
- In a separate bowl sift together the flour, baking powder and baking soda.
- Stir in the oats and coconut.
- Then add the flour/oat mix to the butter mix, and combine thoroughly.
- Let the dough chill in the fridge for 1 hour.
- Form into walnut sized balls, and lightly press down with a fork (you don’t want to squish them, you just want to lightly flatten them).
- Bake for 10-12 minutes.
