Ingredients

The following ingredients have 20 Servings
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups oats
  • 3/4 cup shredded sweet coconut

Instruction

  • Preheat your oven to 350 degrees F.
  • Cream together the butter, white and brown sugars until light and fluffy.
  • Add the egg and vanilla. Mix until creamy.
  • In a separate bowl sift together the flour, baking powder and baking soda.
  • Stir in the oats and coconut.
  • Then add the flour/oat mix to the butter mix, and combine thoroughly.
  • Let the dough chill in the fridge for 1 hour.
  • Form into walnut sized balls, and lightly press down with a fork (you don’t want to squish them, you just want to lightly flatten them).
  • Bake for 10-12 minutes.
