Ingredients

The following ingredients have 4 Servings
  • 4 eggs room temperature separated
  • 3/4 cup caster sugar
  • 1 pinch salt
  • 3/4 cup cornflour
  • 1 tbs custard powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cream of tartar

Instruction

  • Preheat oven to 200C.
  • Grease 2 x 20 cm tins or a larger baking tin.
  • Beat egg whites and salt together until firm.
  • Gradually add the caster sugar. Beat well until sugar has dissolved.
  • Add beaten egg yolks, and beat for 2 minutes.
  • Fold in sifted dry ingredients and pour into baking tins.
  • Reduce oven temperature to 190C and bake for 20-25 minutes on the centre shelf.
  • Dredge cooled cake with icing sugar or cover with whipped cream and crumbled Flake.
