The following ingredients have 2 Servings
- 185 g butter chopped
- 1/2 cup icing sugar
- 1 1/4 cups self-raising flour
- 1/3 cup custard powder
- 1 cup icing sugar
- 15 g butter
- 1 lemon juiced
Instruction
- Cream butter and sugar together until light and fluffy.
- Sift flour with custard powder and fold into creamed mixture.
- Roll into walnut-sized balls and arrange on a lightly-greased or baking paper-lined baking tray.
- Press each cookie lightly with a floured fork.
- Bake at 180C for 10-12 minutes.
- Allow to cool on trays for a few minutes before transferring to a wire rack to cool completely.
- Beat all icing ingredients in a small bowl with a little hot water to form a spreadable consistency.
- Sandwich cold biscuits together with icing, or simply top each biscuit with icing.
