Ingredients

The following ingredients have 2 Servings
  • 185 g butter chopped
  • 1/2 cup icing sugar
  • 1 1/4 cups self-raising flour
  • 1/3 cup custard powder
  • 1 cup icing sugar
  • 15 g butter
  • 1 lemon juiced

Instruction

  • Cream butter and sugar together until light and fluffy.
  • Sift flour with custard powder and fold into creamed mixture.
  • Roll into walnut-sized balls and arrange on a lightly-greased or baking paper-lined baking tray.
  • Press each cookie lightly with a floured fork.
  • Bake at 180C for 10-12 minutes.
  • Allow to cool on trays for a few minutes before transferring to a wire rack to cool completely.
  • Beat all icing ingredients in a small bowl with a little hot water to form a spreadable consistency.
  • Sandwich cold biscuits together with icing, or simply top each biscuit with icing.
