Ingredients

The following ingredients have 12 Servings
  • 185 g butter
  • 1/2 cup caster sugar
  • 2 egg
  • 2 cup self-raising flour
  • 1/2 cup custard powder
  • 1 tbs icing sugar *to decorate
  • 125 g butter
  • 1 cup icing sugar
  • 2 tbs custard powder
  • 1 tbs orange rind grated
  • 2 tsp orange juice

Instruction

  • Cream butter and sugar until light and fluffy.
  • Gradually beat in eggs, mix well after each addition.
  • Gradually fold in sifted flour and custard powder.
  • Place teaspoonfuls of mixture onto a lightly greased oven tray. Press down with a fork.
  • Bake at 180C for 10-15 minutes.
  • Cool biscuits on a cake rack.
  • Filling: Cream butter, icing sugar, and custard powder until light and fluffy.
  • Add orange juice and rind and beat until smooth.
  • Spread biscuits with filling and sandwich together.
  • Dust with icing sugar.
