Ingredients

The following ingredients have 4 Servings
  • 1 tbsp coconut oil or olive oil
  • 3 garlic cloves (minced)
  • 1 orange or red bell pepper (chopped)
  • 1 small onion (chopped)
  • 1/2 tbsp curry powder
  • 1 tsp turmeric
  • 2 cups water
  • 1 cup quinoa (uncooked)
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 1/4 cup cilantro (chopped, optional)

Instruction

  • In a medium sauce pan, heat oil over medium high heat.
  • Saute garlic, onion and peppers for about 5-7 minutes until tender
  • Add curry and turmeric and cook for 3-4 minutes, stirring frequently. Being careful not to burn the spices.
  • Add quinoa, water, and cinnamon
  • Bring to a boil, then reduce to a simmer.
  • Cook covered for about 15 minutes until all the liquid is absorbed.
  • Fluff with a fork and add pepper to taste.
