Ingredients

The following ingredients have 6 Servings
  • 1/4 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1 teaspoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 2 cloves garlic (minced)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 cooked chicken breasts (chopped - about 1/2 lb. each)
  • 1/2 red onion (diced)
  • 2 stalks celery (finely diced)
  • 1/4 cup green onions (diced)
  • 1/2 cup cashews
  • 1/2 cup raisins
  • 1/2 cup shredded carrots

Instruction

  • In a medium bowl combine all the Dressing ingredients and stir until smooth.
  • In a large bowl combine all the salad ingredients.
  • Add dressing to the salad and toss to combine.
  • Garnish with more green onions and serve or refrigerate.
