Ingredients
The following ingredients have 8 Servings
- 1 1/2 kg jap pumpkin chopped peeled
- 2 onions chopped
- 1 tbs garlic crushed
- 3 tbs curry powder
- 1L Massel Chicken Style Liquid Stock
- 1 tbs olive oil
- 600 ml cream
- 1 pinch salt and pepper *to taste
Instruction
- Saute onion, garlic and curry powder in some olive oil until tender.
- Add pumpkin, stock, salt and pepper, and bring to the boil, then reduce to a simmer. The liquid will reduce slightly.
- When pumpkin has softened, blend the soup.
- Stir through cream and simmer.
