Ingredients

The following ingredients have 4 Servings
  • 1kg green prawns deveined shelled
  • 60g butter
  • 1 tbs curry powder
  • 2 celery sticks chopped
  • 1 onion diced
  • 1/2 green capsicum diced
  • 1 tomato chopped peeled
  • 4 tbs plain flour
  • 1 pinch salt and pepper to taste
  • 1 1/2 cups water
  • 1 cup milk
  • 2 chicken stock cubes
  • 1 tsp sugar
  • 1 tbs lemon juice

Instruction

  • In a skillet, melt butter and add curry powder, celery, onion and capsicum.
  • Saute gently for 2-3 minutes. Add tomato and cook for a further 2 minutes.
  • Stir in flour, salt and pepper and cook for 1 minute.
  • While stirring, gradually add water and milk, then add crumbled stock cube.
  • Continue stirring until sauce boils and thickens.
  • Reduce heat, add sugar and lemon juice and simmer for 20 minutes, stirring occasionally.
  • Add prawns and heat through, being careful not to overcook.
