Ingredients
The following ingredients have 6 Servings
- 1/2 cup mayonnaise
- 3 Tbs. coconut oil (, at room temperature)
- 1 Tbs. curry powder
- 1 Tbs. lime juice
- 1 tsp. kosher salt
- 1/2 tsp. pepper
- 3 cups cut-up cooked chicken
- 1 apple (, seeded and chopped, 1 1/2 cups)
- 2/3 cup golden raisins (or dried cranberries)
- 1/2 cup sliced almonds (toasted)
- 2 Tbs. finely chopped red onion
- 12 lettuce leaves
Instruction
- In bowl combine mayonnaise, coconut oil, lime juice, curry powder, kosher salt and pepper until blended.
- Stir in chicken, apple, raisins, almonds, and red onion until evenly coated.
- Divide chicken salad evenly between lettuce leaves.
