Ingredients

The following ingredients have 6 Servings
  • 1/2 cup mayonnaise
  • 3 Tbs. coconut oil (, at room temperature)
  • 1 Tbs. curry powder
  • 1 Tbs. lime juice
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • 3 cups cut-up cooked chicken
  • 1 apple (, seeded and chopped, 1 1/2 cups)
  • 2/3 cup golden raisins (or dried cranberries)
  • 1/2 cup sliced almonds (toasted)
  • 2 Tbs. finely chopped red onion
  • 12 lettuce leaves

Instruction

  • In bowl combine mayonnaise, coconut oil, lime juice, curry powder, kosher salt and pepper until blended.
  • Stir in chicken, apple, raisins, almonds, and red onion until evenly coated.
  • Divide chicken salad evenly between lettuce leaves.
