Ingredients
The following ingredients have 6 Servings
- 2 cans chickpeas
- 1 cup sliced and quartered cucumber
- ½ cup diced green pepper
- ½ cup diced red pepper
- ⅓ cup chopped fresh parsley
- ⅓ cup crumbled feta cheese
- ½ cup olive oil
- ½ cup red wine vinegar
- 1 tbsp Italian seasoning
- 1 tsp minced garlic
Instruction
- Combine chickpeas, cucumber, peppers, and parsley in a large bowl.
- Toss with mixed dressing, and chill for 2 hours.
- Serve topped with Feta cheese.
