Ingredients

The following ingredients have 6 Servings
  • 2 cans chickpeas
  • 1 cup sliced and quartered cucumber
  • ½ cup diced green pepper
  • ½ cup diced red pepper
  • ⅓ cup chopped fresh parsley
  • ⅓ cup crumbled feta cheese
  • ½ cup olive oil
  • ½ cup red wine vinegar
  • 1 tbsp Italian seasoning
  • 1 tsp minced garlic

Instruction

  • Combine chickpeas, cucumber, peppers, and parsley in a large bowl.
  • Toss with mixed dressing, and chill for 2 hours.
  • Serve topped with Feta cheese.
