Ingredients

The following ingredients have 4 Servings
  • 4 mini cucumbers (or Persian cucumbers or cocktail cucumbers)
  • 1 Feta cheese (block of full fat in water, water drained )
  • fresh mint leaves
  • fresh basil leaves
  • 2 tablespoons balsamic reduction (or balsamic glaze)
  • 1 tablespoon extra virgin olive oil
  • pink salt (pinch of)
  • black pepper (pinch of)

Instruction

  • Wash and slice the cucumbers into 1/4 inch coins.
  • Slice the block of feta cheese into 1/2 inch x 1 inch.
  • In a small bowl mix together the balsamic reduction, olive oil, and a dash of salt and black pepper.
  • On skewers or toothpicks, layer them with a mint leaf, cucumber, feta, cucumber, basil leaf. Repeat for the remaining ingredients. Pour the balsamic dressing on top and serve.
