Ingredients

The following ingredients have 4 Servings
  • 2 cucumbers
  • 3 carrots
  • 1 tbsp. sesame seeds
  • 1 green onion (thinly sliced)
  • 2 tbsp. white wine vinegar
  • 2 tbsp. fresh lime juice
  • 2 tbsp. extra-virgin olive oil
  • Freshly ground black pepper

Instruction

  • Cut the cucumbers and carrots into thin strips using a mandoline, spiralizer, or knife.
  • In a bowl, whisk the olive oil, white wine vinegar, and lime juice, and season with freshly ground black pepper to taste.
  • In a salad bowl, combine the cucumbers, carrots, and green onion.
  • Pour the dressing on top, and toss gently.
  • Drizzle with sesame seeds before serving.
