Ingredients

The following ingredients have 4 Servings
  • 1½ pounds shredded rotisserie chicken (fully cooked)
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 3 cloves garlic (minced)
  • 1 yellow onion (diced)
  • 3 carrots (peeled and diced)
  • 3 ribs celery (diced)
  • 30 ounces Great Northern beans (drained and rinsed (2 (15-ounce) cans))
  • 2 bay leaves
  • 4 cups baby spinach
  • Kosher salt and freshly ground black pepper (to taste)

Instruction

  • Place chicken, garlic, onion, carrots, celery, beans, and bay leaves into a large slow cooker. Season with salt and pepper to taste.
  • Stir in chicken broth and 2 cups water. Stir in spinach. Stir until well combined.
  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  • Serve immediately.
