Ingredients
The following ingredients have 4 Servings
- 1½ pounds shredded rotisserie chicken (fully cooked)
- 4 cups low-sodium chicken broth
- 2 cups water
- 3 cloves garlic (minced)
- 1 yellow onion (diced)
- 3 carrots (peeled and diced)
- 3 ribs celery (diced)
- 30 ounces Great Northern beans (drained and rinsed (2 (15-ounce) cans))
- 2 bay leaves
- 4 cups baby spinach
- Kosher salt and freshly ground black pepper (to taste)
Instruction
- Place chicken, garlic, onion, carrots, celery, beans, and bay leaves into a large slow cooker. Season with salt and pepper to taste.
- Stir in chicken broth and 2 cups water. Stir in spinach. Stir until well combined.
- Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
- Serve immediately.
