Ingredients

The following ingredients have 7 Servings
  • 3 - 4 lb Pork Loin Roast
  • 1 Fresh pineapple (divided or 1 Can Pineapple Rings in Juice)
  • 4-6 slices of bacon
  • 1/4 tsp ginger
  • 1/2 tsp garlic powder
  • 1 tablespoons brown sugar (optional)
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instruction

  • Slice the pork roast every 3/4 - 1 inch to create slits. Do not cut all the way through the roast, but about 3/4 of the way through.
  • Fill each slit with a slice of fresh pineapple or a canned pineapple ring.
  • In a small bowl mix all of the seasonings and sprinkle them on top of the roast.
  • Finally lay the bacon across the top of the roast, cover and cook on high for 4 hours or low for 6-8 hours.
  • Remove from crockpot and serve with additional fresh pineapple, rice, and veggies.
  • Leftovers are excellent reheated with some bbq sauce and shredded into sandwiches.
