Ingredients

The following ingredients have 10 Servings
  • 1 lb Boneless Skinless Chicken Breasts (cubed)
  • 1 lb Andouille Sausage (Sliced)
  • 2 14 oz cans diced tomatoes 
  • 1 large onion (chopped)
  • 1 large green bell pepper (chopped)
  • 1 cup diced celery
  • 1 cup chicken broth
  • 2 Tsp  dried oregano
  • 2 Tsp dried parsley
  • 2 Tsp Cajun seasoning
  • 1/2 Tsp dried thyme
  • 1/2 Tsp cayenne pepper
  • 1 lb frozen cooked shrimp (peeled)

Instruction

  • In a 6 qt or larger crockpot, mix the chicken, sausage, tomatoes with juice, onion, green bell pepper, celery, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme.
  • Cover and cook 7 to 8 hours on Low, or 3 to 4 hours on High.
  • 30 minutes before serving stir in the shrimp.
  • Serve over rice.
