The following ingredients have 4 Servings
- 2 pounds boneless (skinless chicken breasts)
- 3/4 cup low-sodium chicken broth
- 1 large onion (diced)
- 1 tbsp. minced ginger
- 4 cloves of garlic (minced)
- 6 oz. can of tomato paste
- 2 tbsp. olive oil
- 1 tbsp. curry powder (or sub Garam Masala)
- 1 tsp. tumeric
- ½ teaspoon cayenne pepper (adjust according to your heat preference)
- 1 tsp. cumin
- 1 tsp. paprika
- 1/2 tsp. cinnamon
- 2 tsp. salt
- 1 tsp. black pepper
- 1 bay leaf
- 12 oz. can unsweetened, full fat coconut milk ((blended so that it is well combined))
- 2 tbsp. arrowroot powder
- juice of 1/2 a lemon
- cilantro (for garnish)
- Prepared cauliflower rice for serving
