Ingredients

The following ingredients have 5 Servings
  • 2 pounds chicken breast
  • 1 1/2 peppers, strands
  • 1 large carrot, strands
  • 1/2 large onion, sliced
  • 6 oz mushrooms, sliced
  • 1 cup tomatoes, finely diced
  • 3 garlic cloves, minced
  • cilantro, for serving
  • lime, for serving
  • 1 tsp salt
  • 1 ½ tsp paprika
  • ½ tsp pepper
  • ¼ tsp ground cumin
  • ½ tsp ground chili pepper

Instruction

  • Slice chicken into uniform strands. Slice onion and mushrooms. Cut carrots and peppers into thin strands. Mince garlic. Dice tomatoes.
  • Add the diced tomatoes and garlic into the bowl of the slow cooker. Then all the vegetables and chicken.
  • Combine all the ingredients for the seasoning. Season ingredients and toss gently, add remaining seasoning and toss again.
  • Close slow cooker with the lid and cook about 5 hours on low and 3 – 4 hours on high. Cooking time will vary depending on your slow cooker and the size you cut your ingredients. Gently stir everything and enjoy as desired.
