Ingredients

The following ingredients have 6 Servings
  • 2 lbs boneless beef chuck roast, cubed ((stew meat))
  • 1 onion, roughly chopped
  • 2 cups winter squash or potato, cubed ((1 delicata, 1/2 butternut or 1 large potato))
  • 3 carrots, chopped into chunky rounds
  • 10 mushrooms, halved
  • 2 cups broth ((bone, chicken or beef))
  • 3 tbsp tomato paste
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh sage, finely chopped
  • 1 tsp salt
  • 1 tsp pepper

Instruction

  • Prep the vegetables as indicated above. 
  • Place all of the ingredients in your crockpot in the order listed above.
  • Cook on low for 8 hours.
