Ingredients

The following ingredients have 4 Servings
  • 4-5 pound beef chuck roast
  • Salt & pepper
  • 1-2 Tbsp. olive oil
  • 4 slices bacon (cut into small 1/2-inch pieces)
  • 2 large onions (sliced)
  • 3-4 large carrots (peeled and cut into large chunks)
  • 5-6 garlic cloves (minced)
  • 1 tsp. thyme
  • 1/4 cup fresh parsley (leave a few sprinkles out for garnish)
  • 2 cups of beef stock
  • 3/4 cup red wine
  • 2 Tbsp. red wine vinegar

Instruction

  • Heat olive oil in a large frying pan and sear the roast on each side, for about 2 minutes per side, until nicely browned.
  • Place in a crock pot; heavily salt and pepper.
  • Place the bacon on top, add the onions and carrots.
  • Mix the garlic, thyme, beef stock, wine, and vinegar together. Pour over the top of the beef and vegetables. Salt and pepper again; sprinkle with chopped parsley.
  • Cover and cook on HIGH for 3-4 hours.
