Ingredients
The following ingredients have 4 Servings
- 4-5 pound beef chuck roast
- Salt & pepper
- 1-2 Tbsp. olive oil
- 4 slices bacon (cut into small 1/2-inch pieces)
- 2 large onions (sliced)
- 3-4 large carrots (peeled and cut into large chunks)
- 5-6 garlic cloves (minced)
- 1 tsp. thyme
- 1/4 cup fresh parsley (leave a few sprinkles out for garnish)
- 2 cups of beef stock
- 3/4 cup red wine
- 2 Tbsp. red wine vinegar
Instruction
- Heat olive oil in a large frying pan and sear the roast on each side, for about 2 minutes per side, until nicely browned.
- Place in a crock pot; heavily salt and pepper.
- Place the bacon on top, add the onions and carrots.
- Mix the garlic, thyme, beef stock, wine, and vinegar together. Pour over the top of the beef and vegetables. Salt and pepper again; sprinkle with chopped parsley.
- Cover and cook on HIGH for 3-4 hours.
