Ingredients

The following ingredients have 6 Servings
  • 2 lb boneless pork loin
  • 3/4 tsp salt (divided)
  • 3/4 tsp chili powder (divided)
  • 1/2 tsp chipotle chili powder
  • 1/4 tsp cumin
  • 1 cup BBQ sauce
  • 1/2 cup water
  • 1 large white onion (diced)
  • 1 TBSP lime juice
  • 2 TBSP tomato paste
  • 3 TBSP apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp garlic (minced)
  • 1/2 tsp liquid smoke

Instruction

  • Rub the pork with ½ tsp salt, ½ tsp chili powder, cumin, and chipotle chili powder. Brown the pork on all sides in a pan over medium-high heat, about 2 minutes per side.
  • Place the browned pork in a slow cooker, and add the remaining ingredients to the slow cooker. Stir everything together. Cover and cook on Low for 10-12 hours or on High for 6-8 hours.
  • Once the pork is cooked, remove from slow cooker, shred it, and return to sauce. Stir together, and taste. You may want to add more seasoning if desired. Serve on a bun or with cornbread. Enjoy!
