Ingredients
The following ingredients have 6 Servings
- 2 lb boneless pork loin
- 3/4 tsp salt (divided)
- 3/4 tsp chili powder (divided)
- 1/2 tsp chipotle chili powder
- 1/4 tsp cumin
- 1 cup BBQ sauce
- 1/2 cup water
- 1 large white onion (diced)
- 1 TBSP lime juice
- 2 TBSP tomato paste
- 3 TBSP apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp garlic (minced)
- 1/2 tsp liquid smoke
Instruction
- Rub the pork with ½ tsp salt, ½ tsp chili powder, cumin, and chipotle chili powder. Brown the pork on all sides in a pan over medium-high heat, about 2 minutes per side.
- Place the browned pork in a slow cooker, and add the remaining ingredients to the slow cooker. Stir everything together. Cover and cook on Low for 10-12 hours or on High for 6-8 hours.
- Once the pork is cooked, remove from slow cooker, shred it, and return to sauce. Stir together, and taste. You may want to add more seasoning if desired. Serve on a bun or with cornbread. Enjoy!
