Ingredients

The following ingredients have 12 Servings
  • 2 cups eggplant (cubed)
  • dash salt
  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 2 teaspoons salt
  • 1/2 tsp pepper
  • 2 tsp Worcestershire sauce
  • 2 tsp mustard
  • 28 ounces canned diced tomatoes (drained)
  • 16 ounces canned tomato sauce
  • 2 cups mozzarella cheese (grated)
  • 2 Tablespoons parsley
  • 1 tsp oregano

Instruction

  • Sprinkle cut eggplant with salt and let sit in a colander for about 30 minutes. Remove into bowl and stir in olive oil.
  • Combine ground beef, salt, pepper, Worcestershire sauce and mustard. Press on bottom and sides of a 9x13 crock pot pan.
  • Top meat with eggplant.
  • Spread tomatoes and sauce over eggplant and sprinkle with remaining ingredients.
  • Slow cook for 3-4 hours on low or high 2-3 hours.
