Ingredients
The following ingredients have 12 Servings
- 2 cups eggplant (cubed)
- dash salt
- 1 tablespoon olive oil
- 2 pounds ground beef
- 2 teaspoons salt
- 1/2 tsp pepper
- 2 tsp Worcestershire sauce
- 2 tsp mustard
- 28 ounces canned diced tomatoes (drained)
- 16 ounces canned tomato sauce
- 2 cups mozzarella cheese (grated)
- 2 Tablespoons parsley
- 1 tsp oregano
Instruction
- Sprinkle cut eggplant with salt and let sit in a colander for about 30 minutes. Remove into bowl and stir in olive oil.
- Combine ground beef, salt, pepper, Worcestershire sauce and mustard. Press on bottom and sides of a 9x13 crock pot pan.
- Top meat with eggplant.
- Spread tomatoes and sauce over eggplant and sprinkle with remaining ingredients.
- Slow cook for 3-4 hours on low or high 2-3 hours.
