Ingredients
The following ingredients have 4 Servings
- 2-3 lbs boneless skinless chicken
- 28 oz Artichokes Heart ((2 14 oz cans), Drained and Chopped)
- 1/4 cup butter (1/2 stick)
- 2 tablespoon minced garlic
- salt and pepper (to taste)
- juice of a lemon
- zest of a lemon (optional)
- 1 1/4 cup heavy cream
- 1 cup shredded Parmesan
- 6 slices crisp bacon (crumbled)
Instruction
- Place chicken in the bottom of a 6 quart slow cooker.
- Add artichokes, garlic, salt and pepper and place butter on top.
- Zest lemon (if desired) over top and then juice lemon evenly over top.
- Cook on high for 3-4 hours or low for 4-6 until chicken is fork tender.
- Stir in cream and Parmesan until cheese melts and chicken falls apart.
- Sprinkle bacon on top and serve.
