Ingredients

The following ingredients have 4 Servings
  • 2-3 lbs boneless skinless chicken
  • 28 oz Artichokes Heart ((2 14 oz cans), Drained and Chopped)
  • 1/4 cup butter (1/2 stick)
  • 2 tablespoon minced garlic
  • salt and pepper (to taste)
  • juice of a lemon
  • zest of a lemon (optional)
  • 1 1/4 cup heavy cream
  • 1 cup shredded Parmesan
  • 6 slices crisp bacon (crumbled)

Instruction

  • Place chicken in the bottom of a 6 quart slow cooker.
  • Add artichokes, garlic, salt and pepper and place butter on top.
  • Zest lemon (if desired) over top and then juice lemon evenly over top.
  • Cook on high for 3-4 hours or low for 4-6 until chicken is fork tender.
  • Stir in cream and Parmesan until cheese melts and chicken falls apart.
  • Sprinkle bacon on top and serve.
