Ingredients

The following ingredients have 7 Servings
  • 3 lbs Boneless (Skinless Chicken Thighs)
  • 21.5 oz Cheddar Cheese Soup ((2-10.75 oz cans))
  • 1 1/2 Cups Chicken Broth
  • 1 Cup Salsa
  • 15 oz Can Mexi-Corn
  • 15 oz Can Black Beans (Drained and Rinsed)
  • 15 oz Can White Chili Beans or Great Northern Beans ( Drained and Rinsed)
  • 15 oz Refried Beans
  • Tortilla Chips
  • Garnish: Taco Sauce (Ranch Dressing)

Instruction

  • Place chicken in a 6 quart slow cooker and cover with remaining ingredients (except refried beans, tortilla chips and garnish).
  • Cook on high for 2-3 hours or low 4-6 hours.
  • Stir in refried beans before serving.
  • Place one chicken thigh in a bowl and tear into bite size pieces with two forks. Repeat with the remaining chicken thighs.
  • Stir bite size chicken back into the crock pot.
  • Serve over a bed of chips and drizzle with ranch dressing and taco sauce.
