Ingredients

The following ingredients have 4 Servings
  • 2 - 3 whole Boneless Skinless Chicken Breasts
  • 12 ounces Frozen Mixed Peppers and Onions
  • 14 ounces Canned Black Beans (drained)
  • 14 ounces Canned Diced Tomatoes
  • 14 ounces Canned Corn (drained)
  • 2 cloves Garlic (minced)
  • 1 packet Low Sodium Taco Seasoning Mix (low-sodium, or homemade)
  • 12 Flour Tortillas
  • Cheese (shredded)
  • Guacamole
  • Sour Cream
  • Tomatoes (diced)
  • Lettuce (shredded)

Instruction

  • Place chicken breasts in the bottom of a 4 to 6 quart slow cooker.
  • Add the remaining ingredients (except for the tortillas and toppings) to the slow cooker and toss to combine.
  • Cover and cook on LOW for 5 to 6 hours.
  • Remove chicken from slow cooker and shred meat with two forks. Add shredded chicken back into the slow cooker with the remaining ingredients.
  • Serve shredded chicken mixture in flour tortillas and top with your favorite toppings.
