Ingredients
The following ingredients have 4 Servings
- 2 - 3 whole Boneless Skinless Chicken Breasts
- 12 ounces Frozen Mixed Peppers and Onions
- 14 ounces Canned Black Beans (drained)
- 14 ounces Canned Diced Tomatoes
- 14 ounces Canned Corn (drained)
- 2 cloves Garlic (minced)
- 1 packet Low Sodium Taco Seasoning Mix (low-sodium, or homemade)
- 12 Flour Tortillas
- Cheese (shredded)
- Guacamole
- Sour Cream
- Tomatoes (diced)
- Lettuce (shredded)
Instruction
- Place chicken breasts in the bottom of a 4 to 6 quart slow cooker.
- Add the remaining ingredients (except for the tortillas and toppings) to the slow cooker and toss to combine.
- Cover and cook on LOW for 5 to 6 hours.
- Remove chicken from slow cooker and shred meat with two forks. Add shredded chicken back into the slow cooker with the remaining ingredients.
- Serve shredded chicken mixture in flour tortillas and top with your favorite toppings.
