Ingredients
The following ingredients have 4 Servings
- 4 medium Yukon Gold, Russet, or Red potatoes, (peeled and cut into 1/2-inch pieces)
- 3 cups fresh or frozen corn, thawed
- 4 cups cubed ham
- 3 celery ribs, (chopped)
- 1 medium onion, (chopped)
- 3 garlic cloves, (minced)
- 1/2 teaspoon pepper
- 1/2 teaspoon poultry seasoning
- 3 cups chicken broth
- 2 tablespoons cornstarch
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream
- 1 tablespoon minced fresh parsley
Instruction
- Place the first 9 ingredients in a 6-quart slow cooker. Cover and cook on LOW for 8 hours.
- In a small bowl, whisk cornstarch and milk until smooth. Stir into soup.
- Cover and Cook on HIGH for 30 minutes.
- Stir in cheddar cheese until melted.
- Stir in sour cream. Sprinkle parsley on top.
