Ingredients

The following ingredients have 4 Servings
  • 1 lb boneless (skinless chicken thighs)
  • 3/4 cup Catalina dressing
  • 1 cup pineapple chunks
  • 1/4 cup juice from the can of pineapple chunks
  • 2 cups of rice (prepared)

Instruction

  • Place your chicken in the bottom of your crock pot
  • Pour your dressing on top
  • Top with your pineapple chunks
  • Pour your pineapple juice on top
  • Cover and cook on low for 3-4 hours or high for 1.5-2 hours
  • Serve over a bed of rice with the sauce ladled over the top
