Ingredients

The following ingredients have 8 Servings
  • 2 lbs Beef (cubes)
  • 2 cups Carrots (chopped)
  • 2 cups Baking potatoes (2 large)
  • 1/2 cup Onions (diced)
  • 1/2 inch Ginger (sliced)
  • 1 large Garlic (sliced)
  • 1 tsp Thyme (dried)
  • 2 sprig Rosemary
  • 1 Cinnamon stick
  • 2 Bay leaves
  • 1 tsp Paprika
  • 1 tbsp Tomato paste
  • 1 cup Chicken broth
  • 1/4 cup Red wine (optional)
  • 1 tbsp Vinegar
  • 1 tbsp Mustard
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch
  • 1/4 cup water

Instruction

  • Add carrots, potatoes, beef, onion, garlic, ginger, herbs, and spices into the slow cooker.
  • In a bowl or measuring cup – combine broth, red wine, Worcestershire sauce, vinegar, tomato paste, and mustard.
  • Then, pour the liquid ingredients over the slow cooker ingredients.
  • Cover and cook on low-heat for 6 hours or on high for 3 hours.
  • Combine cornstarch and water in a bowl. Then, add it to the slow cooker.
  • Continue to cook on high for another hour.
  • Serve over steamed rice, couscous, or cauliflower rice.
