Ingredients

The following ingredients have 4 Servings
  • 2 Boneless skinless chicken breasts (cut into bite size pieces)
  • 1 cup bbq sauce
  • 1 teaspoon minced garlic
  • 6 cups chopped romaine lettuce
  • 1 Roma tomato (diced)
  • 1 can corn kernels (drained)
  • 1 can black beans (drained and rinsed)
  • 1/2 red onion (diced)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterrey jack cheese
  • 1/2 cup Ranch dressing
  • 1/4 cup tortilla strips

Instruction

  • Place the chicken, bbq sauce and the minced garlic in the crock pot.
  • Cook on low for 6-8 hours until cooked through.
  • To assemble the salad, place romaine lettuce in a large bowl; top with chicken, tomato, corn, beans, onion and cheeses. Pour Ranch dressing on top of the salad and gently toss to combine.
  • Serve immediately, topped with tortilla strips.
