Ingredients
The following ingredients have 4 Servings
- 4 cups cauliflower (a large head)
- 1 small onion (diced)
- 1 teaspoon salt
- 1 teaspoon pepper (ground black pepper)
- 6 cloves garlic (minced)
- 3 cups chicken broth
- 8 oz cream cheese
- 1/2 cup cheddar cheese (shredded)
- 1/2 pound bacon (cooked and chopped)
- 2 strips of scallions (sliced)
Instruction
- Cut the cauliflower into florets and place it in your crockpot with your onion, salt, pepper, garlic and chicken stock.
- Cook on low for 6 hours or high for 4 hours.
- Once its done add your cream cheese and cheddar cheese. Using an immersion blender puree the soup until it is smooth and creamy. Stir in most of the bacon.
- Portion out your soup into the bowls and top with some extra cheese, bacon, and scallions
