- 1 kg pork belly, (1 big piece, do not slice)
- 1 whole garlic, crushed
- 1 tbsp peppercorns

- ¼ cup soy sauce
- 1 can lemonade soda (7-Up or Sprite)
- sea salt
- water
- oil for deep frying
- 1 large carrot, sliced
- 1 small broccoli, cut into florets
- 800 ml coconut milk
- ⅓ cup Thai red curry paste
- 2 tbsp palm sugar or equivalent
- fish sauce
- 8 pcs kaffir lime leaves
- ⅓ cup sweet basil, chopped
- 1 long red chilli, thinly sliced
