Ingredients

The following ingredients have 4 Servings
  • 4 large Parsnips (peeled and quartered lengthways)
  • 4 large carrots (peeled and quartered lengthways)
  • extra virgin olive oil

Instruction

  • Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
  • Place the vegetables in a large roasting dish and drizzle with 2-3 tbsp olive oil. Mix well and arrange evenly at the bottom of the dish. Roast for around 30 min until golden brown. Season to taste with salt and ground black pepper.
