The following ingredients have 4 Servings
- 1-½ lbs fingerling potatoes
- 3 tablespoons Cowboy Butter (melted)
- 2 tablespoons olive oil
- salt and black pepper
Instruction
- Preheat the oven to 400-degrees F
- Lightly grease a rimmed baking sheet.
- Cut the fingerling potatoes in in half lengthwise.
- Melt the butter in a microwave-safe bowl.
- Toss the potatoes in the butter with olive oil.
- Add the potatoes to the baking sheet.
- Roast for 25-30 minutes, turning the potatoes half way through, until the potatoes are fork tender and golden brown.
- Season with salt and pepper and serve hot.
