Ingredients
The following ingredients have 4 Servings
- 4 chicken breasts (skinless, boneless)
- 1 cup flour (seasoned with 2 tsp taco seasoning)
- 2 extra large eggs (beaten)
- 2 cups bread crumbs (seasoned with 2 tsp taco seasoning)
- 2 tbsp olive oil
- flour tortillas (I made my own using this recipe)
- chopped avocado
- chopped tomatoes
- sliced red onions
- chopped cilantro / coriander
- 1 cup sour cream
- 2 tbsp mayonnaise
- 1-2 tbsp hot sauce of your choice
- ½ tsp lime juice
- salt ( to taste )
Instruction
- Preheat the oven to 220°C/430°F. Line a sheet pan with foil or parchment paper and spray with nonstick cooking spray.
- Slice the chicken breasts into thin strips.
- Place the seasoned flour, eggs and breadcrumbs in separate bowls.
- Coat the chicken first in the flour, then dip into the egg and finally into the breadcrumbs. Make sure the chicken is well-coated after each step.
- Place the chicken onto the prepared sheet pan. Drizzle with the olive oil and place into the oven. Allow to bake for 10-15 minutes, flipping halfway through until the chicken is golden brown and crisp on both sides.
- Combine all the sauce ingredients and mix well.
- To assemble the tacos, spread a little of the sauce onto each tortilla then top with the chicken and toppings of your choice.
- Serve with lemon/lime wedges.
