Ingredients

The following ingredients have 9 Servings
  • 4 large Idaho® russet potatoes
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 2 tablespoons Creole seasoning
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup unsalted butter (melted)
  • 2 tablespoons chopped fresh flat-leaf parsley for garnish (optional)

Instruction

  • Preheat oven to 350°F.
  • Peel potatoes and cut into bite-sized pieces. Place potato pieces in a large bowl.
  • Add onion, garlic, Creole seasoning, lemon zest, lemon juice, and butter. Toss to combine.
  • Place mixture in a lightly greased 2-quart casserole dish.
  • Bake for 1 hour, or until potatoes are tender.
  • Garnish with chopped parsley (if using).
