Ingredients
The following ingredients have 9 Servings
- 4 large Idaho® russet potatoes
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 2 tablespoons Creole seasoning
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup unsalted butter (melted)
- 2 tablespoons chopped fresh flat-leaf parsley for garnish (optional)
Instruction
- Preheat oven to 350°F.
- Peel potatoes and cut into bite-sized pieces. Place potato pieces in a large bowl.
- Add onion, garlic, Creole seasoning, lemon zest, lemon juice, and butter. Toss to combine.
- Place mixture in a lightly greased 2-quart casserole dish.
- Bake for 1 hour, or until potatoes are tender.
- Garnish with chopped parsley (if using).
