Ingredients
The following ingredients have 6 Servings
- 3 pounds red potatoes, skin on
- 1/2 pound bacon, cooked and crumbled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons dijon mustard
- 1 tablespoon creole or cajun seasoning
- 1 cup celery, finely chopped
- 2 hard-boiled eggs, finely chopped
- 2 green onions, thinly sliced
- Kosher salt and freshly ground pepper, to taste
Instruction
- Cut potatoes in half or quarters depending on size. Place in a large pot and cover with cold salted water by one inch.
- Bring to a boil, reduce heat and simmer until potatoes are fork tender, about 15-20 minutes. Drain potatoes and set them in the refrigerator to chill.
- In a large bowl, whisk together mayonnaise, sour cream, dijon mustard, and creole or cajun seasoning.
- Add bacon, celery, chopped eggs, and green onion, and stir to combine. Add chilled potatoes, chopping into bite-sized chunks as needed, and stir to combine. Taste, season with salt and pepper as needed, and serve. Enjoy!
