Ingredients
The following ingredients have 4 Servings
- 5 Tbsps Oil
- 2 Leeks (chopped)
- 1 stick Celery
- 4 cups potatoes (peeled and chopped)
- 4 cups vegetable stock
- 2 handfuls Wild garlic leaf (washed)
- 0.875 cup cream
- 1 onion (sliced into rings)
Instruction
- Heat 3 tbsp oil in a large saucepan. Add the leek and celery and cook gently for 5 minutes.
- Add the potatoes, stir for 2 minutes then pour in the stock and bring to a boil. Cover and simmer over a low heat for about 30 minutes.
- Add the wild garlic leaves, cook for 5 more minutes then remove from the heat.
- Whizz the soup in a blender until smooth, add the cream and season to taste with salt and pepper.
- Fry the onion rings in the remaining oil and drain on kitchen paper.
- Gently reheat the soup and serve with the fried onion rings.
