Ingredients

The following ingredients have 4 Servings
  • 5 Tbsps Oil
  • 2 Leeks (chopped)
  • 1 stick Celery
  • 4 cups potatoes (peeled and chopped)
  • 4 cups vegetable stock
  • 2 handfuls Wild garlic leaf (washed)
  • 0.875 cup cream
  • 1 onion (sliced into rings)

Instruction

  • Heat 3 tbsp oil in a large saucepan. Add the leek and celery and cook gently for 5 minutes.
  • Add the potatoes, stir for 2 minutes then pour in the stock and bring to a boil. Cover and simmer over a low heat for about 30 minutes.
  • Add the wild garlic leaves, cook for 5 more minutes then remove from the heat.
  • Whizz the soup in a blender until smooth, add the cream and season to taste with salt and pepper.
  • Fry the onion rings in the remaining oil and drain on kitchen paper.
  • Gently reheat the soup and serve with the fried onion rings.
