Ingredients
The following ingredients have 6 Servings
- 10.58 ounces leftover turkey (chopped)
- ½ cup less 1tbsp dried sweetened cranberries
- 1 medium avocado (cubed)
- 1 small red onion (finely chopped)
- 1½ tablespoons vegetable oil
- 3 tablespoons lime juice (plus zest of 1½ limes)
- 3 tablespoons fresh mint leaves (finely chopped)
- 7 tablespoons thick yogurt (natural or Greek yogurt or Skyr)
- 3 tablespoons mayonnaise
- ½ garlic clove (minced)
- Sea salt and pepper to taste
Instruction
- Combine the dressing ingredients and stir until smooth.
- In a large bowl combine the chopped turkey, cranberries, cubed avocado and chopped red onion.
- Pour in the dressing, stir, adjust the seasoning and serve.
